A real easy plant-based treat. It has a moreish gooey texture from the fridge and seems so wickedly indulgent. As some of you have asked for more treats I'd thought we'll start with this one. So if your fingers are creeping towards the cookie jar then STOP and give these a go. If you're really longing for more indulgence drizzle some melted dark chocolate over and savour. We usually find one or two of these is enough to sate.
You'll nearly always find one or two sweet potatoes lurking in our storecupboard. It's regularly showing up in our soups, stews, tasty healthy fries and cakes. Just as well we love it! There never seems enough of these parsnip chips when we make them. They are so easy to make and enjoy. Some of our friends sprinkle nutmeg on them before sending them off to the oven for the big bake. You might like to try that one yourself too.
Let's shout out for the much under-loved parsnip. At least it was in this house until we changed our tune about a couple of years ago. Now it's either parsnips or spuds, and rarely the two at the same meal. I know we're big trendsettes here (and not!).
Go on you must like an easy satisfying soup. What better veg than a butternut squash to fill the gap. Cosy up to this great standby. Especially if you've have it prepared beforehand in the fridge to have as a quick lunch or light supper. Add a few slices of gluten-free bread or hummus and veggie batons and you're sorted.
Simple yet elegant with a creamy texture after dinner treat. It's so easy to make too that'll want to kick yourself it took you so long to find it. Well at least that's what we wanted to do when I came up with the recipe. Ok so I say quick yet the banana have to stay in the freezer overnight, but other than that....
