Warming Spiced Coconut Milk

You've been out on a long day's shopping, or just worked yourself to the bone, for hopefully a grateful boss? Now it's time to sit yourself down to a mug of warming spiced coconut milk. This is very easy to make and is like a warm blanket cuddling around you as the wind is howling outside. 
 
It's been very difficult to locate a few of my regular spices this year (I'll find them now once this post is live!). Instead, this year I've used a mulled wine spice pack from one of the local stores.

Herbi's Homemade Mincemeat

We've used this mincemeat recipe for years. Our original has Cointreau in it. Be sure to add the Cointreau in place of the orange juice if it's suitable for your diet. You can use this mincemeat in our Mincemeat Rolls. Of course if you've a favourite pastry of your own be sure to us it.

Raw Cacao, Almond & Cranberry Snowballs

Truffles always impress don't they? These are healthy and so easy to prepare, have no nasty "non-food" ingredients and a perfect treat to share when friends drop in for a cuppa and chat at any time of the year.

Mulled Apple Juice

Well the winter surely hit in the last few days, so cold in Ireland isn't it? I usually have mulled wine, cider or apple juice nearer to Christmas but caved in over the weekend. Whether it does or not I convinced myself that it warms me up. mugful but it is certainly not like the sweeter versions that are my norm. Hope you like it.
