Warming Spiced Coconut Milk


  • 1 can organic coconut milk
  • 200ml filtered water
  • 25g wine mulling spices ​
  • 1 tsp organic vanilla extract
  • 2 tsp coconut palm sugar
  • 40g dark chocolate (70%)
  • extra chocolate for grating

You've been out on a long day's shopping, or just worked yourself to the bone, for hopefully a grateful boss? Now it's time to sit yourself down to a mug of warming spiced coconut milk. This is very easy to make and is like a warm blanket cuddling around you as the wind is howling outside. 
It's been very difficult to locate a few of my regular spices this year (I'll find them now once this post is live!). Instead, this year I've used a mulled wine spice pack from one of the local stores. That little pack has saved me a ton of time, plus frees up storage space on my spices & herb rack. Hope you get to treat yourself to this scrumptious pleasure. 
Stir the coconut milk and water, in a saucepan, until mixed through and smooth. Add the spices and coconut palm sugar, bring to the boil, then simmer for 5 minutes, stirring regularly. Remove from the heat and leave to cool down and the flavours infuse for a few hours. When ready re-heat and serve. Drop the chocolate in and let melt. Stir the chocolate until mixed through the milk. Next grate some extra chocolate over the top and enjoy. 
I used the 160ml Thai Gold organic coconut milk. The mulling spices pack was 50g and I used 25g as I figured that if the whole lot is used for a bottle of wine then half should be ample for my spiced coconut milk drink. Oh and use your favourite chocolate, either shop bought or of your own creation. Add more sweetener if you need to. Hope these tips help you make a delicious spiced coconut milk treat for yourself.
