Toasted Porridge with Berries, Pomegranate, Almonds & Dairy free cream

INGREDIENTS

  • 40g GF porridge oats
  • 260g almond milk
  •  

Toppings:

  • 1 tbsp dairy free cream
  • 1 tbsp pomegranate seeds
  • 1 tbsp almond butter
  • 5 blueberries

I used to hate porridge as a child as it was served up made with salt and water or milk and refined white sugar. It was as boring as they come. Plus it took ages about 20-30 minutes to prepare. I rarely eat porridge for breakfast nowadays but when I do it is spruced up with delicious toppings, making it far more interesting, tasty and worth the effort. Here is one such breakfast, hope you like it.
 
 
 
 
 
 
 
 
SERVES: 1
 
Toast the porridge oats in a saucepan until they smell toasty on a medium heat (should be less than a minute). 

Carefully pour the almond milk in, bring to the boil, then simmer for 2 minutes on a low to medium heat. You may need to add more almond milk as you want to have a creamy texture. 

Pour into a bowl and add the toppings and serve immediately.

Tip:

I use Ecomil almond milk or a soya cream.
