Perfect lunch, or afternoon snack for us all. It's important to look after yourself and eat healthy as much as possible. Here's a wonderfully easy plant-based recipe, packed with nourishing goodness. You could even leave it in the car (in a small cooler bag) in the shopping centre and go back and nibble on it halfway through shopping. 
 
It's also an ideal treat for a vegan or plant-based eater dropping in on you anytime, or yourself if you're looking for something fresh and light.
 
 
 
 
 
 
 
 
 
 
 

SERVES 1:

Arrange them on a plate and enjoy with an herbal tea or Raspberry & Rosehip Kombucha (Synerchi brand). 

You can easily make this for two as you'll have enough chickpeas from the chickpea recipe, just double up on all the other ingredients.

Enjoy!

Feel free to use any sprouts, such as sprouted legumes (beans). I just like hero sprouts as if you haven't tried them before they are flavourful without having an earthy taste like some of the others.
