No Bake Fig Brownie


  • 200g dried figs
  • 7 tbsp orange juice, divided
  • 1 tbsp vanilla extract
  • 60g coconut oil
  • 90g almond flour
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 50g hulled hemp seed
  • 4 tbsp raw cacao powder​
  • 2 tbsp maple syrup

This recipe had been lost in a pile of recipes, written on scraps of paper, that had found a home for themselves in a corner of my dining room shelves. I dread to think how long they've been lying there. At long last though we are getting through them. Hope you enjoy it. This brownie has a gorgeous sweetness to it for those days when nothing else will do but to satisfy your sweet tooth. 

Finely chop the figs and soak in 3 tablespoons of the orange juice until softened, about 1 hour. Soak the almonds separately in a bowl of water at the same time. 

Meanwhile melt the coconut oil and allow to cool. Drain the almonds, then place them along with the soaked figs, orange juice, vanilla extract and coconut oil. Whizz until combined. 

Add the ground almonds, cinnamon, ginger, hemp seeds, chia seeds, raw cacao powder and orange juice and whizz to combine. Check the taste and if you'd like more sweetness add in your favorite liquid sweetener. Add a tablespoon at a time of the sweetener until you're happy. At most I've added in 3 tablespoons of agave nectar. 

Mould into a parchment-lined baking dish then refrigerate for 2 hours. Cut into bite-sized squares and enjoy with friends.
