Nibble Feast: Crispy Coconut 'Bacon'

  • 125g coconut flakes
  • 1 tbsp coconut oil (odourless)
  • 1 + 1/2 tbsp tamari (GF)
  • 1/2 tbsp smoked paprika

Now here's the thing what to do when you fancy crispy indulgence with a healthy twist. Don't say go on have a few carrot sticks and be quiet with ya. Imagine it's Friday night you've both been working hard all week and want to break out of the shackles? Ok so we're not working in dungeons but don't tell me you don't understand. Instead of grabbing for the take-away menu why not have a few tasty snacks prepared the night before and have a Nibble Feast?

We often do a Nibble Feast night on a Fridays or Saturdays if we're not going out. Ensure you get a good hearty lunch to replace dinner then indulge in tasters. Serve with salad and either invite a few friends over for a laugh or snuggle up on the sofa to catch up on your TV shows (ours at the minute are The Big Bang, Person of Interest and Suits)? 

With all this in mind here is one vegan recipe that's perfect for the occasion. 

Preheat oven to 1800 Fan

Serves 1:

Coat the coconut flakes in the rest of the ingredients on a parchment-lined baking sheet. Spread the coconut flakes around the baking tray, ensure there is no clumping together of the flakes as they won't bake properly.

Bake in the preheated oven for 5 minutes. Remove and toss the flakes around and spread out again. 

Bake for up to another 5 minutes. They should be lightly browned. Leave to cool completely to a crispy tasty treat. They will crisp up as they cool.
