'Eat Me Now!: Raw Cacao & Quinoa Nibbles
- 80g extra virgin coconut oil
- 70g or agave syrup (clear)
- 30g raw cacao powder
- 2 tsp vanilla extract (optional)
- 1 tsp cinnamon (optional)
- 40g dried fruit
- 450g GF quinoa puffs
- 45g GF crispy rice
What can I say, it's Christmas and time to indulge in chocolate. Come to think of it anytime is a great time to indulge in chocolate, especially healthy raw cacao. This recipe is a handy one and if you prefer more sweetness then try adding some cinnamon or more dried fruit.
Melt the coconut oil and agave syrup slowly in a bowl over a saucepan of simmering water. Place the bowl on a heatproof surface then add the raw cacao powder, vanilla and cinnamon (if using), stir to combine. Spoon in the remaining ingredients and mix through.
Freeze for an hour or until the mixture is firm enough to form into balls. Scoop out a heaped tablespoon and squeeze into shape in the palms of your hands.
Refrigerate until ready to use.
Alternatively spread out on a parchment-lined baking sheet and bake for 10-15 minutes at 2000Fan. Allow to cool completely. This version lasts longer, does not have to remain refrigerated. It reminds me of granola and is super great for spinkling over dairy-free yogurt. Or scooped into bags and sealed with string as above. A lovely present for Christmas, Easter or a birthday. For fun you could write on the label 'Eat Me Now!".
