Easy Almond & Coconut Truffles
- 100g soft dates (we used Deri dates)
- 50g gluten-free coconut flour
- 50g almond flour
- 50g coconut oil
- 30g coconut butter
- 1/2 tsp organic vanilla extract
If you're away from home and in need of a healthy treat here's one to try. You just need a mini-processor and the regular gear you'd have even in a sparsely equipped kitchen. I always try to have a mini-processor as it's easy to whip up treats.

Whizz all the ingredients in a food processor until a wet texture is reached. It should easily stick together when you squeeze some lightly in your hand.
Scoop out 12 equal sized portions (about 1 tablespoon per truffle). Squeeze to combine them. Roll into the truffle shape using the palms of your hands. Refrigerate until solid
When it's time for tea serve them up and enjoy:)
You may have to scrap down the sides of the mini-processor a couple of times. It depends on the one you're using.
