Wickedly delicious treats and one of the first dairy-free treats I ever made. Friends who don't have a sweet tooth fine excuses to scoff them off. It is a simple recipe but sometimes I meet someone who hasn't even heard of it before. For those of you who haven't and I may never meet you here's a simple recipe for a sweet treat. I remember one person who hadn't a sweet tooth said she uses them as a treat after Saturday family meal. A handy replacement for a dessert and much smaller amount of sweetness. 

 
Makes: 18

Make a slit lengthways along one side of each date, and open out as far as possible while keeping the date intact. Remove the stones in all the dates.

Place an equal amount of the hazelnut butter into each date and close back up as much as possible.
A seam of hazelnut butter might remain visible. Refrigerate for about an hour. By doing so the nut butter needs to have hardened up enough so as it won't spill out when you're dipping in the melted chocolate. 

Melt the chocolate and vanilla extract in a heatproof bowl by slowly melting over a saucepan of just boiled water. Once melted stir to combine all the ingredients.

Once the chocolate mix has cooled coat the stuffed dates, placing each one on parchment paper.

Transfer to the fridge until the chocolate hardens (takes at least 1 hour). The chocolate coating hardens to handle but still soft to chew. Alternatively, place them in the freezer for 5-10 minutes for the chocolate to harden. 

Serving suggestion: ideal after dinner treat when you want a small amount of sweetness to round off the meal. 

Tip: we use dark chocolate 70% or above cocoa solids.
