Dark Chocolate coated Almond & Babaob Truffles


  • 150g ground almonds 
  • 150g medjool dates (no stone)
  • 2 tsp babaob powder
  • 15g raw cacao powder
  • 30g coconut butter
  • 1 tsp vanilla extract 
  • 120g dark chocolate*


* ensure suitable for your diet and at least 75% cocoa solids

Make these healthy truffles or probably should be called energy balls, at the weekend so you have a tasty treat whenever the nibbles attack during the week.


In a food processor whizz up the almonds and dates into a fine breadcrumb texture. Add the raw cacao powder and coconut butter and continue processing until all combined. The mixture should be sticky.

Take 2 tablespoons for each truffle then squeeze and roll each into a truffle shape using one hand. It's more awkward trying to roll in two hands. 

Melt the chocolate then add the vanilla extract and stir until combined. The chocolate will thicken up. Coat each truffle in the chocolate. Allow to cool completely on a parchment lined tray, either on the worktop or in the fridge. 

All is left is to share them around with your friends and family to indulge in.
