Dairy-free Banana & Peanut Ice Cream
- 100g crunchy peanut butter
- 50g ripe avocado
- 1-2 tbsp maple syrup / raw agave nectar
- 200g thinly chopped frozen ripe bananas
- Extra: grated dark chocolate (suitable for your diet)
Imagine smooth, velvety creaminess. This indulgent dairy-free ice cream leaves you drooling for more. Or maybe that's just me!
No need for an ice cream maker and once you have the ingredients inhouse then it's a joy to make.
Remember to freeze finely sliced banana overnight. If you keep the slices apart during freezing it's easier to separate them the next day. As we use crunchy peanut butter there are some nut pieces speckled throughout. To avoid this use smooth peanut butter
Whizz up all the ingredients until smooth. Depending on the food processor used you may have to scrap down the sides a few times to ensure all the ingredients are mixed through fully.
Serve immediately as it melts very quickly.
