Apple & Blackberry Crumble

INGREDIENTS

CRUMBLE:

  • 170g gluten-free oats
  • 50g pecans
  • 30g pumpkin seeds
  • 1 tsp vanilla extract
  • 80g agave syrup
  • 60g extra virgin coconut oil

FILLING:

  • 500g cooking apples thinly sliced
  • 160g blackberries
  • 1 tsp xylitol

A definite comfort food to sweeten the coldest of days. This one is free of dairy, wheat, gluten if you ensure to use ingredients you use are. 

Preheat oven to 1800 Fan

Whiz up the oats, pecans, seeds in a food processor to a fine breadcrumb. Add the rest of the crumble ingredients and whiz up until combined and a sticky consistency.

Place all the filling ingredients in a baking dish.

Spoon out the crumble and spread evenly over the top of the filling, using your fingers.

Bake for 25-30 minutes in the preheated oven.

Allow to cool and serve with dairy-free ice cream or organic soya cream, or whippped coconut cream

 

Herbi

Can replace the apples and blackberries with 660g mixed berries. Any of the above toppings work for Carnis too. If you're prefer dairy then add some whisked good quality organic dairy cream to your portion.
