No need for an ice cream maker and once you have the ingredients inhouse then it's a joy to make. 

 
 

Crunchy Cornflake Buns

Remember as a child making rice crispy buns? Here's a play on the "throwing" nearly a packetful of rice krispies into the warmed and melted chocolate. Use cornflakes instead for, what I think is, a far crispier texture than rice krispies. 

Healthy Mixed Seed & Hazelnut Butter

When you want to pack more seeds and nuts this is s satisfying snack lasting longer than chewing on a small handful of seeds and nuts. It's one of my go-to recipes. Lots of goodness here folks so get it into ya!!!

Mincemeat Dairy-free Vanilla Ice Cream with Dairy-free Custard

Are you a lover of hot custard and cold ice cream? It's one of my Favourite Top Ten Desserts. By using a dairy-free and vegan ice cream I can satisfy that longing.

It's an ideal one to have in the pantry (freezer of course for the ice cream) when guests on special diets arrive at your doorstep.

Mulled Apple Juice

Well the winter surely hit in the last few days, so cold in Ireland isn't it? I usually have mulled wine, cider or apple juice nearer to Christmas but caved in over the weekend. Whether it does or not I convinced myself that it warms me up. mugful but it is certainly not like the sweeter versions that are my norm. Hope you like it.

When I saw the blueberries and redcurrants on special offer yesterday in my local shop I grabbed a few packs. Happy thoughts of smoothies and possibly a berry crumble to be made were making me hungry on the drive back home .

During the Holiday season: Halloween, Thanksgiving, Christmas we're all going to be very busy buying presents, goodies and what not.  It's easy to forget about, or only see a guest or family member on a restrictive diet as a nuisance or a weight bearing down heavily on you to sort out. Here's a quick and easy one to have at the ready which is easy to adjust depending on dietary needs.  

Broccoli & Basil Soup

Do you prefer making a soup out of broccoli than having it as a side vegetable, or is it just me? I do as you can add so many wonderful vegetables and nuts to it for a more interesting flavour.

Having it as a side vegetable, unless smothered in a 'creamy' sauce, just doesn't really light my fire. Since I know it's so healthy for me I try to eat it regularly so when I'm in a hurry I tend to just make up this easy soup below. Also as a snack afterwards I chew on a roasted walnuts with the cuppa of herbal tea.

Banana & Cherry Smoothie (or Breakfast Ice Cream)

What better way to celebrate a sunny morning than to indulge in some  'ice cream' smoothie. The velvety smooth texture reminds me of ice cream's lusciousness every time I lick a spoonful of it. Also with the beautifully sunny morning yesterday I wanted something fresh and cooling
