Homemade Beet Crisps

Not sure what to do with that leftover beetroot? Make some beet crisps.

A mandolin would probably work better slicing these but as I don't have one that's not going to happen. I use my food processor instead with the slicing blade attachment. You need to ensure the beet slices are very thin otherwise they will never crisp up for you. 

Cacao Nibs & Gogi Berry Ice Pop

Icy, crunchy & cooling is how we describe this ice pop. Not sweet at all but thirst quenching in a blistering heat (which we got in Ireland yesterday, yah!). There's a tip too if you don't have ice lollies moulds.

Chia Seed & Raspberry Pudding

I often come across chia seed puddings on the web but never had the inclination to make one. That all changed yesterday when I had some leftover almond milk. For the laugh I decided to make up a pudding so I could once and for all prove it's not worth the effort. 

So wrong was I. What a gorgeous breakfast or mid-afternoon snack and way too easy. 

Homemade Hemp Milk Hot Chocolate

There are times in life when you just want hot chocolate. It's usually an upset, either a so called friend stabs you in the back (metaphorically speaking), your favourite umbrella broke in the rain, or whatever. It doesnt' really have to be a major life catastrophe, now does it? Us women have an inherent instinct to "justify" the necessity.

We rush to the kitchen at full speed and whip up hot chocolate or grab our favourite chocolate bar. Our cure-all for life's minor setbacks, or so we convince ourselves.

Grain-free Berry Crumble

Nothing like a bit of nostalgia is there? Childhood memories of pouring lashgings of custard over apple and blackberry crumbles springs to mind. A quick dessert once you've some fresh or defrosted fruit or berries so ideal if unexpected guests arrive.

Wild Garlic & Kale Hummus

Up to last week I'd never tasted wild garlic. As a child I remember traipsing around back roads between Waterford city and the seaside village of Tramore searching for gooseberries, blackberries and all those wonders. I wouldn't count it as one of my favourite pastimes but the sweet smell of blackberry pies or gooseberry fool were the rare delights of my childhood that I do miss from those excursions.

What do you think, a cool kitchen gadget or what? 

I came across this 2-in-1 peeler in the supermarket recently. It's label promised veggie juliennes. As my kitchen space is limited a spirualiser is not on the cards right now. On seeing this I instantly dreamt of perfect salad noodles.
