Butternut Squash Soup

Go on you must like an easy satisfying soup. What better veg than a butternut squash to fill the gap. Cosy up to this great standby. Especially if you've have it prepared beforehand in the fridge to have as a quick lunch or light supper. Add a few slices of gluten-free bread or hummus and veggie batons and you're sorted.

A definite comfort food to sweeten the coldest of days. This one is free of dairy, wheat, gluten if you ensure to use ingredients you use are.

Roasted Chickpeas

I dismissed the humble chickpea years ago. That all changed when I went dairy-free, gluten-free and vegan. It's a very welcome and staple ingredient in my storecupboard nowadays. It's so easy to use chickpeas to make a simple vegetable soup a hearty dinner, or in a hummus for a tasty savoury treat with crackers, as the protein on a salad.
