During the Holiday season: Halloween, Thanksgiving, Christmas we're all going to be very busy buying presents, goodies and what not. It's easy to forget about, or only see a guest or family member on a restrictive diet as a nuisance or a weight bearing down heavily on you to sort out. Here's a quick and easy one to have at the ready which is easy to adjust depending on dietary needs.
Do you prefer making a soup out of broccoli than having it as a side vegetable, or is it just me? I do as you can add so many wonderful vegetables and nuts to it for a more interesting flavour.
Having it as a side vegetable, unless smothered in a 'creamy' sauce, just doesn't really light my fire. Since I know it's so healthy for me I try to eat it regularly so when I'm in a hurry I tend to just make up this easy soup below. Also as a snack afterwards I chew on a roasted walnuts with the cuppa of herbal tea.
We've been so busy the last while it's been hard to get to everything. Our new site is beginning to take shape and now it's time to get all our recipes into a fit state.
