Squash & Red Pepper Soup

Bring a ray of sunshine into your life with this vibrant squash and red pepper soup. No point in depending on the sun to come out (well at least in little auld Dublin, Ireland that's for sure).

This vegan and wheat-free soup was a real 'what's left after the weekend in the cupboard' throw together. I was pleased with it though and sure so long as we're happy with what we make and can eat and enjoy it isn't that's all that matters? Anyway onto the soup.


A citrusy zing to the dressing that will wake up any salad.

Tony is constantly searching for ways of sprucing up my dishes. Here's one he created himself a few weeks back. Up until then our lemon and balsamic dressings were the norm.

Tortilla Crisps

Crunchy GM Gluten Free (made with corn only) tortillas crisps. Great accompanient to my Butterbean & Red Onion Hummus

I made these up the other day to use with my Butter & Red Onion Hummus. Glad they worked as there was nothing else in the house suitable to use. I used My Mexican Shop gluten-free tortillas.


Sweet butterbeans make this a moreish hummus. It's so easy and tasty you'll just keep making it. Great as a snack or as a nibble while watching your favourites on TV with gluten-free tortilla crisps and raw vegetables (e.g. carrots and celery)
