Mincemeat Dairy-free Vanilla Ice Cream with Dairy-free Custard

INGREDIENTS

  • 100g vegan and gluten-free vanilla ice cream
  • 50g mincemeat
  • 1 tbsp vegan custard powder*
  • 300-400ml unsweetened almond milk

Are you a lover of hot custard and cold ice cream? It's one of my Favourite Top Ten Desserts. By using a dairy-free and vegan ice cream I can satisfy that longing.

It's an ideal one to have in the pantry (freezer of course for the ice cream) when guests on special diets arrive at your doorstep.

To make then mincemeat ice cream. Soften the ice cream enough to allow you to mix the mincemeat through. Place the mincemeat ice cream in a suitable container and refreeze.

We decided to make individual portions by dividing the ice cream and mincemeat mixture into cupcake tray lined with silicone cupcake cases. 

 
To make the custard follow the custard pack instructions and ensure the miilk is a dairy-free one. We used an unsweetened almond milk. Divide equally into the serving bowls and place a cupcake ice cream on top.
Get the spoons at the ready and dig in.

*Vegan Custard Powder:

You need to source a custard powder that suits your diet. Check the ingredients and ensure they suit your diet. We used a Just Wholefoods All Natural Custard Powder. If you are in doubt about any ingredients you need to check with the supplier or producer of the product you intend to use.
