Mincemeat Dairy-free Vanilla Ice Cream with Dairy-free Custard
Are you a lover of hot custard and cold ice cream? It's one of my Favourite Top Ten Desserts. By using a dairy-free and vegan ice cream I can satisfy that longing.
It's an ideal one to have in the pantry (freezer of course for the ice cream) when guests on special diets arrive at your doorstep.
To make then mincemeat ice cream. Soften the ice cream enough to allow you to mix the mincemeat through. Place the mincemeat ice cream in a suitable container and refreeze.
We decided to make individual portions by dividing the ice cream and mincemeat mixture into cupcake tray lined with silicone cupcake cases.
*Vegan Custard Powder:
You need to source a custard powder that suits your diet. Check the ingredients and ensure they suit your diet. We used a Just Wholefoods All Natural Custard Powder. If you are in doubt about any ingredients you need to check with the supplier or producer of the product you intend to use.
