Blueberry, Redcurrant & Avocado Smoothie


  • 250g blueberries
  • 200ml almond milk
  • 100g ripe avocado
  • 50g frozen redcurrants
  • 1 tbsp hemp seeds
  • 1 tbsp freshly squeezed lemon juice
  • 1 teas xylitol

When I saw the blueberries and redcurrants on special offer yesterday in my local shop I grabbed a few packs. Happy thoughts of smoothies and possibly a berry crumble to be made were making me hungry on the drive back home .

For starters this morning I threw some of them into the liquidiser and came up with this smoothie. It's velvety smooth and indulgent and packed with blueberries, redcurrants and mildly sweetened with xylitol, with an avocado thrown in for good measure.

Blend all the ingredients until smooth and serve. If you prefer it sweeter add in maple syrup or raw agave nectar.
